Halloween Eyeball Cake

Anyone who knows us knows that we LOVE Halloween.
This gruesome Halloween Cake shows how easy it is to make a disgustingly delicious Red Velvet Cake

This recipe needs to be baked in layers as it is too light to cook all in the one tin.I always use cake spray on my PME tins and they come out perfect every time.This recipe will make 6 x 6” round Layer and will all measure 1” high once the top is removed. I use a cake leveler to level my cakes to the exact size I want.
Its really easy to throw this together and freezes perfect. I actually think its nicer after freezing!
Here are the ingredients:
- 680g Plain flour
- 860 Caster Sugar
- 15g Cocoa powder
- 10g Baking Soda
- 2 Medium eggs
- 620g Sunflower oil
- 400g Buttermilk
- 25ml Vinegar
- 10ml Vanilla
- 1 Large tube of ProGel Red
Method:
This Recipe Couldn’t be more easy!
- Weigh your wet ingredients and whisk to combine.
- Then weigh out all you dry ingredients and mix to combine
- Then simply add the wet to the dry. You can do this by hand, with a hand mixer or a stand mixer makes no difference to the final cake.
- Divide the batter into tins sprayed with Cake release spray You can use your eye or if you fancy, you can even weight them out. Nothing wrong with being exact .
- Then Bake at 180c for about 40 mins. The time will vary depending on the size of cake you make. So keep checking, until a wooden skewer come out clean.
This cake is best served with cream cheese frosting, or white chocolate ganache. Yum!
